Chicken And Waffles
This is a personal favorite of mine. Who doesn’t love a gloriously good sweet and savory, crunchy snack laced with maple syrup?
Hash Brown Waffles
Instead of your usual batter, shred potatoes into a large bowl filled with cold water. Stir until water is cloudy, drain, and cover potatoes again with fresh cold water. Stir again to dissolve excess starch. Drain potatoes well, pat dry with paper towels, and squeeze out any excess moisture. Put a pat of butter into your waffle maker. Add shredded potatoes to the hot butter and season with salt, black pepper, cayenne pepper, and paprika. Proceed as usual, and enjoy!
Grilled Cheese Waffles
Quick – what’s crispy and crunchy and gooey on the inside? Butter up two pieces of bread and place them on top of each other butter side out, with a slice of your favorite cheese in between. Each waffle maker is different, so just check periodically to see when it’s a nice golden brown (I like the cheese oozing out a bit…)
This one’s a doozy – simply top your waffle maker with another 1/4 cup of egg mixture, or as much as your waffle iron can take before overflowing. Cook about 1 to 2 minutes until eggs are thoroughly cooked. With a spatula, cut the waffle into fours then remove from the iron. Spray with oil and repeat until desired quantity of frittata waffles are cooked.
Corn Bread Waffles
In a large bowl combine flour, cornmeal, baking powder, sugar, and salt. Add milk, oil, and eggs and stir until smooth. Pour batter onto hot waffle iron and bake in batches. Spoon chili over waffles.
